Ingredients

  • 2 lbs potatoes (Yukon Gold or red)
  • 3/4 cup Bounwell's Real Mayonnaise
  • 2 tbsp mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs, chopped
  • 2 tbsp pickle relish
  • 1 tbsp white vinegar
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. 1Wash and cut potatoes into 1-inch cubes. Place in a large pot and cover with water.
  2. 2Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.
  3. 3In a large bowl, mix Bounwell's Real Mayonnaise, mustard, and vinegar.
  4. 4Add celery, red onion, eggs, and pickle relish to the dressing.
  5. 5Gently fold in the cooled potatoes until well coated.
  6. 6Season with salt and pepper to taste.
  7. 7Chill in the refrigerator for at least 2 hours before serving.
  8. 8Garnish with paprika before serving.
